Ice Cream Soda Cocktail – A boozy treat for summer

Summer is the perfect time for cold boozy desserts like alcohol ice cubes, sorbet martinis and this ice cream soda cocktail. It’s just what you need to celebrate National Ice Cream Soda Day on June 20th!

The theme of last month’s recipe round-up was chocolate chips. Since chocolate chips are one of my favorite food groups, it was easy to come up with the chocolate chip brownies with Kahlua. The theme this month was ice cream soda.

This one was a harder for me. I don’t eat dairy ice cream. I also don’t drink soda. I’m a big fan of the booze, but sodas? Nope. Haven’t had one in years.

So, it took me a few days to come up with some ideas for an ice cream soda cocktail. I decided to go in the direction of vanilla and coffee.

For the ice cream portion, I used Luna and Larry’s Coconut Bliss. It’s made from coconut milk and is organic, vegan, soy free, dairy free and gluten free. But it’s not taste free. It’s really good with a subtle hint of coconut. I have tried many different flavors of Coconut Bliss and have loved them all. For this ice cream soda cocktail, I went with the Vanilla Island flavor. They also have chocolate and mocha flavors that would be good.

And for the soda… I found Virgil’s cream soda at Whole Foods. It’s made from natural ingredients with no high fructose corn syrup.

Of course, use whatever vanilla ice cream and cream soda you like to drink. If you’re picky like me, I suggest trying the same brands I did.

Now the booze. You know, the important part of any cocktail. Keeping with the vanilla theme, I grabbed my favorite bottle of 360 Madagascar Vanilla Vodka. For the coffee part, I poured in some Kahlua.

Everything together was exactly what I would expect from an ice cream soda. And it was even better because it was filled with booze!

Ice Cream Soda Cocktail


How to make an Ice Cream Soda Cocktail

Serves: 1

Ingredients

  1. 1 ounce vanilla vodka
  2. ½ ounce Kahlua
  3. Vanilla ice cream
  4. Cream soda

Preparation

  1. Pour vanilla vodka and Kahlua into a chilled martini glass.
  2. Add a scoop of vanilla ice cream.
  3. Top with cream soda.
  4. Serve with a spoon and a straw.
